The Perfect Grilled Chicken – Katie’s Kitchen Counter

When I got married, my mother gave me “Home Comforts: The Art and Science of Keeping House” in what I can only assume was a last-ditch effort to prevent my new house from resembling my messy bedroom. The author, who is also a lawyer, writes about faster, easier ways to keep house which resemble more of an art form and less of a list of chores. It’s actually a fascinating read! Who knew?

One habit I learned from the book is creating the proper grocery shopping list. Shopping lists should be detailed (encompassing every meal ingredient for an entire week) and organized (written aisle by aisle for optimal speed in the store). And I have always sat down and penned my shopping list on Sunday evenings. Which is exactly what I was doing when I happened upon my friend Katie’s blog post on grilled chicken. (Even the most organized of grocery-list makers need “Internet browsing breaks.”) I can’t think of a better time to post a new grilled chicken recipe than the onset of summertime, when hopefully dozens of grill-worthy evenings lay ahead of us.

Perfect Grilled Chicken

Grilled chicken-everyone has a recipe and everyone is looking for another one. Why? Because it’s the first thing you think of grilling for weeknight dinners and it’s so easy yet surprisingly easy to mess up. Here’s a recipe my family likes. It uses fresh herbs and healthy ingredients. It also has both a marinade and extra sauce to drizzle on the chicken when serving which I find keeps the chicken moist and extra flavorful. I serve this chicken with the pasta I posted yesterday. It’s a good dinner combo!

Perfect Grilled Chicken

Ingredients:

6 Tbsp. extra virgin olive oil

2 Tbsp. freshly squeezed lemon juice

1 Tbsp. flat leaf italian parsley, minced

1 1/4 tsp. sugar

1 tsp. dijon mustard

salt and pepper

2 Tbsp. water

3 garlic cloves, minced

4 boneless skinless chicken breasts
